Welcome to Bites With Beth! I’m so glad you’ve stopped by my site. My name is Beth Halcomb and I am a Military Wife, New-ish Mama, dog mom, and Teacher with an affinity for all things cooking, health, and wellness. I’m currently based out of Central Texas because that’s where the Army told my husband to go!

The inspiration for Bites With Beth started all the way back in the summer of 2017. After months of returning to the doctor again and again for daily migraines and a sinus infection that just didn’t go away for six months, I had an allergy test. I was shocked to find out that I had food allergies. It makes sense, in hindsight, that I’d get a migraine every day after lunch. I was eating a combination of most of my allergens for lunch daily – dairy, soy, wheat, apples, bananas, and fish. I thought I’d been eating a balanced, healthy lunch when in reality I was poisoning my body just a little every day.

As you can imagine, learning to cook and avoid all of these allergens at once was quite overwhelming at first. I found great solace in the health and wellness community on Instagram. From Instagram, I discovered a community of food bloggers devoted to creating healthy meals that avoided many of the things I’m allergic to. Over the course of the past few years, I’ve re-taught myself how to cook and how to eat.

The mission of Bites With Beth is to create and share recipes that mostly avoid my allergens, share practical advice for attempting a balanced life, and ultimately help busy people like YOU get a healthy meal on the table for yourself or your family.

This year’s garden is coming S L O W due to cool weather (until now!), little rain, annnd my own lack of remembering to water the garden daily but all of these babies are coming out of the garden to make room for new ones to grow.
Baby Girl turned O N E yesterday. We celebrated by playing with her big brother, going to the local drive in movie theater, making a gf cake, and having her favorite- spaghetti - hello two baths.
Had a week of vacation and forgot my allergy medicine - you can see in the photos my face is progressively more swollen each day 🙃😆 but it was a great week!
Anyone else out there??
The thing we’re *most* excited to try is at the end of the week! We’re trying bbq pork spare ribs on our @traegergrills - we haven’t had anything come off of it yet that we didn’t love but this will be our first slow recipe on it! Since John is working this weekend, it’s fitting that we should start next weekend off with a bbq recipe fit for Father’s Day Weekend!
